About the Recipe
Cod with broa has the flavor of Portuguese oven cooking, with a rustic and crunchy topping.
The broa absorbs olive oil and garlic, forming a golden layer over the cod.
It is common to appear in family meals, served with potatoes or greens as a side.
Ingredients
- 4 pieces of desalted cod
- 300 g of crumbled corn broa
- 700 g of boiled potatoes sliced
- 1 sliced onion
- 4 cloves of garlic
- 100 ml of olive oil
- Chopped parsley or cilantro
- Black pepper
Preparation Method
- Sauté onion in olive oil until soft and spread it on the bottom of the baking dish.
- Place the potatoes and the pieces of cod on top.
- Mix broa, chopped garlic, herbs, and olive oil until it forms a moist crumb mixture.
- Cover the cod with the seasoned broa.
- Bake until the topping is golden and crunchy.
- Serve with sautéed greens.
Tips from Empório Portugal
- The broa needs to be moist with olive oil to brown without burning.
- If the cod is already cooked, reduce the baking time.
- A layer of onion prevents the dish from drying out.
Possible Substitutions in Brazil
- Portuguese broa can be replaced with rustic corn bread.
- Sautéed collard greens can substitute for grelos with good approximation.
