About the Recipe

Cod with spinach is a balanced way to bake fish with greens and creamy texture.

The recipe combines the salty flavor of cod with the freshness of spinach and the tenderness of potatoes.

Ingredients

  • 500 g of desalted cod in flakes
  • 2 bunches of spinach
  • 700 g of potatoes
  • 1 chopped onion
  • 3 cloves of garlic
  • 80 ml of olive oil
  • 250 ml of optional white sauce
  • Bread crumbs
  • Salt, pepper, and nutmeg

Preparation Method

  1. Cook the potatoes and prepare puree or soft slices.
  2. Sauté garlic and onion in olive oil.
  3. Add cod and spinach until wilted.
  4. Layer the dish with potatoes and sautéed mixture.
  5. Top with white sauce, if using, and bread crumbs.
  6. Bake until golden.

Tips from Empório Portugal

  • Squeeze the spinach if it releases too much water.
  • Puree makes the dish more delicate.
  • Bread crumbs help balance the creaminess.

Possible Substitutions in Brazil

  • Spinach can be replaced with escarole.
  • Brazilian English potatoes work well.

Pairing
