About the recipe

Baked Cod is one of the most universal preparations in Portugal: fillets, potatoes, onions, and plenty of olive oil.

The key is the doneness of the fish and the distribution of the olive oil — too dry loses juiciness; too moist loses texture.

Ingredients

  • 4 pieces of desalted cod
  • 4 medium potatoes sliced
  • 2 onions in half-moons
  • 4 cloves of sliced garlic
  • 150 ml of olive oil
  • 1 bay leaf
  • Black pepper
  • Chopped parsley

Preparation method

  1. Preheat the oven to 200 °C.
  2. Arrange the potatoes and onions in a baking dish.
  3. Drizzle with half of the olive oil and season.
  4. Place in the oven for 20 minutes.
  5. Put the cod fillets on top.
  6. Add garlic, bay leaf, and the remaining olive oil.
  7. Bake for 25 to 30 minutes until the fish is done.
  8. Finish with chopped parsley and serve immediately.

Tips from Empório Portugal

  • Cover with aluminum foil in the first few minutes if the oven is too strong.
  • Thick fillets require more time — adjust according to the piece.
  • Serve with bread to soak up the aromatic olive oil.

Possible substitutions in Brazil

  • Sweet potato can replace part of the regular potatoes.
  • Red onion adds different color and sweetness.

Pairing

Dry white wine or light rosé. Content intended for those over 18 years old. Drink in moderation.
