Carrots à algarvia are a simple, colorful, and fresh appetizer.

The seasoning of garlic, vinegar, and olive oil transforms the boiled carrot into a cold snack full of flavor.

Ingredients

  • 600 g of sliced carrots
  • 3 cloves of minced garlic
  • 60 ml of olive oil
  • 2 tablespoons of vinegar
  • Parsley or cilantro
  • 1 pinch of cumin optional
  • Salt and pepper

Preparation method

  1. Cook the carrots until tender but firm.
  2. Drain and let cool.
  3. Mix garlic, olive oil, vinegar, herbs, and seasonings.
  4. Toss the carrots in the dressing.
  5. Let rest in the refrigerator.
  6. Serve cold or at room temperature.
