About the Recipe
Cod croquettes occupy pastry shop displays and snack menus throughout the country.
The dough should be firm enough to shape but creamy inside after frying.
Ingredients
- 400 g of shredded desalted cod
- 500 ml of milk
- 60 g of butter
- 60 g of flour
- 1 chopped onion
- 2 eggs
- Fine breadcrumbs
- Wheat flour
- Olive oil or oil for frying
- Nutmeg and pepper
Preparation Method
- Sauté the onion in butter until transparent.
- Add the flour and stir for 1 minute.
- Gradually add milk, forming a thick béchamel.
- Add shredded cod and season.
- Cook until it pulls away from the bottom of the pan.
- Let cool completely.
- Shape into croquettes, coat in flour, egg, and breadcrumbs.
- Fry in hot oil until golden and drain on paper.

- Cold dough shapes better — you can prepare it the day before.
- Fine breadcrumbs give a more uniform crust.
- Serve with lemon and olives.

- Milk can be partially replaced with cream.
