About the recipe

Meat croquettes are a staple at counters, parties, and savory snacks in Portugal.

The dough needs to have concentrated flavor, moldable texture, and a crispy fry.

Ingredients

  • 500 g of cooked or minced meat
  • 1 chopped onion
  • 2 cloves of garlic
  • 2 tablespoons of butter
  • 3 tablespoons of flour
  • 250 ml of milk or broth
  • Chopped parsley
  • Nutmeg
  • Egg and breadcrumbs
  • Oil for frying

Preparation method

  1. Sauté onion and garlic in butter.
  2. Add finely chopped meat and seasonings.
  3. Gradually add flour and then milk or broth.
  4. Cook until a firm dough forms.
  5. Cool, shape croquettes, and bread them.
  6. Fry until golden.

Tips from Empório Portugal

  • Cold dough shapes better.
  • Well-chopped meat prevents crumbly croquettes.
  • Nutmeg should be subtle.

Possible substitutions in Brazil

  • Leftover roasted meat works very well.
  • Breadcrumbs can be replaced with fine panko flour.

Pairing

Light beer, light red wine, or iced tea. Content intended for those over 18 years old. Drink responsibly.
