About the recipe
Cod stew combines flakes, potato, and onion in a thick and fragrant broth.
Unlike the dry stew, here the liquid is part of the experience — bread for dipping is almost mandatory.
Ingredients
- 600 g of desalted cod in flakes
- 4 potatoes in pieces
- 2 onions
- 3 ripe tomatoes
- 4 cloves of garlic
- 100 ml of olive oil
- 500 ml of water or broth
- Bay leaf, pepper, and parsley
Preparation method
- Sauté onion and garlic in olive oil.
- Add chopped tomato and cook until it breaks down.
- Add potatoes and water.
- Cook for 15 minutes.
- Add cod flakes.
- Cover and cook on low heat for 20 minutes.
- Adjust broth — it should be thick, not watery.
- Finish with chopped parsley.
Tips from Empório Portugal
- Do not boil vigorously after adding the cod.
- Broth can be thickened with a mashed potato.
- Let it rest for five minutes before serving.
Possible substitutions in Brazil
- White wine can replace part of the water.
- Red bell pepper adds extra sweetness.
