Cod strips are a quick-response snack: thin strips, golden garlic, and fragrant olive oil.
They appear in taverns, cafés, and sharing tables — ideal for starting a meal or pairing with a beer.
Ingredients
- 500 g of desalted cod
- 4 sliced garlic cloves
- 100 ml of olive oil
- Wheat flour
- Black pepper
- Chopped parsley
- Lemon
Preparation Method
- Cut the cod into thin strips and lightly dry.
- Season with pepper and quickly coat in flour.
- Heat olive oil in a large skillet.
- Sauté or fry the strips until golden.
- Remove and set aside.
- In the same oil, brown the garlic without burning.
- Add the strips back, toss and sauté for 1 minute.
- Finish with parsley and drops of lemon.

- Thin strips cook in seconds — do not let them dry out.
- Burnt garlic will bitter the entire dish.
- Serve immediately, very hot.
