The color comes from parsley mixed with the yolk, which is then returned to the white before breading.

Ingredients

  • 6 boiled eggs
  • Abundant chopped parsley
  • 1 tablespoon of olive oil
  • 1 teaspoon of mustard optional
  • Wheat flour
  • 1 beaten egg for breading
  • Breadcrumbs
  • Oil for frying
  • Salt and pepper

Preparation Method

  1. Cut boiled eggs in half and remove the yolks.
  2. Mash the yolks with parsley, olive oil, salt, and pepper.
  3. Refill the whites.
  4. Dip in flour, beaten egg, and breadcrumbs.
  5. Fry until golden.
  6. Drain and serve warm or cold.
