Cod toasts reflect the creative economy of Portuguese cuisine: day-old bread, shredded cod, and olive oil.

They work as an appetizer, snack, or social nibble — quick and always well-received.

Ingredients

  • 300 g of desalted shredded cod
  • 6 slices of sandwich bread or cornbread
  • 1 small chopped onion
  • 2 cloves of garlic
  • 80 ml of olive oil
  • Parsley or coriander
  • Pepper and lemon

Preparation method

  1. Sauté onion and garlic in half of the olive oil.
  2. Add the shredded cod and sauté for 3 minutes.
  3. Season with pepper and herbs.
  4. Toast the slices of bread until crispy.
  5. Lightly rub with garlic.
  6. Distribute the cod over each slice.
  7. Drizzle with the remaining olive oil.
  8. Serve with lemon.

  • Slightly dry bread toasts better.
  • Do not overload — a thin layer spreads the flavor better.
  • Can gratin for 2 minutes in the oven.

Possible substitutions in Brazil

  • Cornbread gives a more rustic profile.
