Why salt cod became a table symbol
Dried and salted, salt cod has crossed generations of the Portuguese table — from Christmas Eve supper to Sunday lunch, from the pantry to the feast dish. There is no single official story: what persists is the gesture of cooking, sharing and adapting.
The ingredient’s versatility explains part of the affection: it accepts a slow oven, a quick pan, shredded into eggs, flakes in a salad, a steak with potato and generous olive oil. Onion, eggs, broa and vegetables complete the repertoire without needing an exotic shopping list.

How to choose salt cod
Editorial guidance — each piece and each market has particularities. Use this as a starting point, not as an absolute rule.
- AparênciaFirm flesh, visible fibres, without strange stains or a very dry look that would indicate loss of quality.
- CorteSteak for the oven and lagareiro; loin for platters; flakes and shredded fish for Brás, fritters and salads.
- EspessuraThicker pieces need more desalting time; thin ones cook fast and need attention so they do not dry out.
- SalThe salt content varies — always taste a flake after soaking before seasoning the recipe.
- AromaIt should smell like clean cured fish; a strong or unpleasant smell is a warning sign.
- Intended useDecide first: steak, flake, shredded, oven, fritter or salad — the right cut makes the result easier.
Technique
How to desalinate without mistakes
Time varies with cut, thickness and salt content — there is no single number of hours valid for every piece.
- Lavar the piece under cold running water, removing surface salt and visible impurities.
- Cover with cold water em recipiente adequado — a peça deve ficar totalmente submersa.
- Keep refrigerated throughout the process; do not leave at room temperature for long periods.
- Change the water at regular intervals — the saltier the salt cod, the more water changes will be needed.
- Adjust the time to the size of the piece: thick steaks need more patience; thin flakes, less.
- Taste for salt before finishing — cook a small portion or taste a raw flake after a light blanch.
